These sweet potato kimchi cakes are a flavourful and easy-to-make vegan dish. Roast a large sweet potato until soft, then mash it with chopped kimchi, sweetcorn, spring onion, ginger, and chili. Form patties and pan-fry until crisp. Serve with a kimchi mayo made from kimchi mixed with mayo and a squeeze of lime, topped with chopped coriander. Perfect for a delicious and vibrant meal during Veganuary.
