### Ingredients

  • 250g cherry tomatoes
  • 1 tbsp Belazu Co sundried tomato pesto
  • 3 tbsp Greek yoghurt
  • 1 tsp Belazu Co roasted garlic flavour hacks
  • 0.5 a lemon, juiced
  • Belazu Co Verdemanda Extra Virgin Olive Oil
  • Salt
  • Pickled shallots
  • Parsley
  • 1 can Moth Drinks Paloma
  • 1 slice of grapefruit
  • Ice

### Method

1. Preheat the oven to 190C.

2. Drizzle the cherry tomatoes with olive oil and sundried tomato pesto, then roast in the oven for 20-25 minutes or until bursting and juicy.

3. In a bowl, mix Greek yoghurt with roasted garlic flavour hacks, lemon juice, and salt.

4. Spread the yoghurt mixture on a plate.

5. Top the yoghurt with the roasted tomatoes, pickled shallots, and parsley.

6. Crack open the Paloma can and serve it over ice with a slice of grapefruit. Enjoy!
