### Ingredients
- 250g cherry tomatoes
- 1 tbsp Belazu Co sundried tomato pesto
- 3 tbsp Greek yoghurt
- 1 tsp Belazu Co roasted garlic flavour hacks
- 0.5 a lemon, juiced
- Belazu Co Verdemanda Extra Virgin Olive Oil
- Salt
- Pickled shallots
- Parsley
- 1 can Moth Drinks Paloma
- 1 slice of grapefruit
- Ice
### Method
1. Preheat the oven to 190C.
2. Drizzle the cherry tomatoes with olive oil and sundried tomato pesto, then roast in the oven for 20-25 minutes or until bursting and juicy.
3. In a bowl, mix Greek yoghurt with roasted garlic flavour hacks, lemon juice, and salt.
4. Spread the yoghurt mixture on a plate.
5. Top the yoghurt with the roasted tomatoes, pickled shallots, and parsley.
6. Crack open the Paloma can and serve it over ice with a slice of grapefruit. Enjoy!
