Sticky Teriyaki Aubergine

This recipe is for sticky teriyaki aubergine, perfect for the Nectar Fruit & Veg Challenge. Halve and score a large aubergine, then roast it in the oven. Make a dressing with ginger, garlic, chili, soy sauce, sesame oil, honey, and vinegar. Brush the dressing over the roasted aubergine and bake for an additional 15 minutes. Top with sesame seeds, crispy onions, and spring onions before serving.
