Herby Pistachio Pasta with Courgettes

This recipe features mafaldine pasta with fried courgettes, a flavourful herby pistachio sauce, and a generous amount of lemon. The dish is not as complex as it may seem, with the herby dressing being easily made using a pestle and mortar. Simply fry sliced courgettes until golden brown, then cook the pasta.
