This recipe is for a nutritious and flavourful summer dal made with red and yellow lentils, onions, garlic, ginger, and a variety of aromatic spices. The dish is enriched with antioxidants, anti-inflammatories, and vitamins, making it a perfect evening meal. Simply sauté the onions, garlic, ginger, and spices before adding the lentils and vegetable stock to simmer until cooked. Finish off with a drizzle of coconut milk and garnish with pickled onions, coriander, and chilli. Serve with fluffy bread for a satisfying meal.
