This recipe features a refreshing super seeded green salad with quinoa, green beans, broccoli, avocado, and spring onions, topped with a flavourful dressing. The trick to keeping the veggies fresh is to blanch the green beans and broccoli and then submerge them in ice water. The avocado is cubed and dressed with lemon juice to maintain its freshness. The dressing, made with olive oil, wholegrain mustard, lemon juice, vegan honey, salt, and pepper, ties all the ingredients together.
