### Vegan Nachos
#### Black Beans:
- 2 x 400g tins black beans
- 0.5 an onion, finely chopped
- 2 minced garlic cloves
- 1 tbsp smoked paprika
- 0.33 tsp cayenne pepper
- 1 tsp coriander
- 1 tsp cumin
- Pinch of cinnamon
- 0.5 tsp salt
- 1 tbsp peanut butter
#### Guacamole:
- 2 ripe avocados
- 0.5 a red chili
- 1 tbsp chopped red onion
- 1 minced garlic clove
- 0.5 tsp salt, more to taste
- 1 tbsp chopped coriander
- 1 tbsp olive oil
- Juice of 1 lime
#### Salsa:
- 300g cherry tomatoes, quartered
- 0.5 a red chili, finely chopped
- 1 tbsp chopped coriander
- 1 minced garlic clove (optional)
- Juice of 1 lime
- Pinch of salt
#### Cheeze:
- 1 tbsp vegan butter
- 1 tbsp flour
- 250ml plant milk
- Spices: 1 tsp paprika, 1 tsp turmeric, 1 tsp onion powder, 1/2 tsp nutmeg
- 100g boiled butternut squash or potato
- 100g cashews, soaked in hot water for at least 15 mins
- 3 tbsp nutritional yeast (nooch)
- Water to loosen - start with 50ml and adjust consistency
#### Pink Pickled Onion:
- 0.33 red onion, sliced and pinched with lime juice and salt for 2-3 mins
#### Other Ingredients:
- Tortilla chips
- Fresh coriander
