### Vegan Nachos

#### Black Beans:

  • 2 x 400g tins black beans
  • 0.5 an onion, finely chopped
  • 2 minced garlic cloves
  • 1 tbsp smoked paprika
  • 0.33 tsp cayenne pepper
  • 1 tsp coriander
  • 1 tsp cumin
  • Pinch of cinnamon
  • 0.5 tsp salt
  • 1 tbsp peanut butter

#### Guacamole:

  • 2 ripe avocados
  • 0.5 a red chili
  • 1 tbsp chopped red onion
  • 1 minced garlic clove
  • 0.5 tsp salt, more to taste
  • 1 tbsp chopped coriander
  • 1 tbsp olive oil
  • Juice of 1 lime

#### Salsa:

  • 300g cherry tomatoes, quartered
  • 0.5 a red chili, finely chopped
  • 1 tbsp chopped coriander
  • 1 minced garlic clove (optional)
  • Juice of 1 lime
  • Pinch of salt

#### Cheeze:

  • 1 tbsp vegan butter
  • 1 tbsp flour
  • 250ml plant milk
  • Spices: 1 tsp paprika, 1 tsp turmeric, 1 tsp onion powder, 1/2 tsp nutmeg
  • 100g boiled butternut squash or potato
  • 100g cashews, soaked in hot water for at least 15 mins
  • 3 tbsp nutritional yeast (nooch)
  • Water to loosen - start with 50ml and adjust consistency

#### Pink Pickled Onion:

  • 0.33 red onion, sliced and pinched with lime juice and salt for 2-3 mins

#### Other Ingredients:

  • Tortilla chips
  • Fresh coriander
