These crispy rice bites are topped with two delicious options: chickpea tuna with avocado and furikake, and ponzu-marinated grapefruit with siracha mayo and spring onion. The sticky rice is frozen, cut into rectangles, and fried until golden. The chickpea tuna mixture, made with mashed chickpeas, nori, mayo, and spices, is spread over avocado-topped rice, while the grapefruit segments marinated in ponzu are placed on rice with siracha mayo. Sprinkle furikake on the chickpea tuna bites and sliced spring onion on the grapefruit ones. These bites are versatile, easy to make, and bursting with flavour - a must-try snack or appetizer.
