My hot (maybe not so hot?) take today is that pre-made curry pastes are highly underrated and quite frankly a life saver sometimes. If you can find a good one and always have it lurking somewhere in a cupboard, you are never far from a quick and delicious meal! I’ve used prawns in this but you can easily keep it plantbased by using tofu!
