Welcome to episode 3 of my “leftover rice” series. Today we’re making a rosti out of the leftovers! This worked so well and I implore you to try it out. Topped with roasted salmon, a gooey poached egg and a tangy Dijon sauce. Perfection!

- 1 egg
- 1 tsp dijon mustard
- 1 tbsp mayo
- 4 spears of asparagus
- 80g tenderstem broccoli
