Crispy Kimchi Rice
Welcome back to episode 2 of my leftover rice series! Today weβre doing what is arguably the best way to use up those rice leftovers - crispy rice! Crispy kimchi rice to be more precise, this recipe is great because it requires only a few ingredients most of which you would usually have lurking in the kitchen! You can obviously sub the jammy egg (mine was left a touch too long and is not as jammy as I usually have it) for some tofu!

- 250g leftover rice
- 75g kimchi
- 1 garlic clove
- 1 inch piece of ginger
- 0.5 an avocado
- 1 egg
- 1 sprig spring onion
- 1 tsp sesame seeds
- 1 tsp chopped chives
