Crispy rice with salmon is the bank holiday recipe you need! I devoured these and when we ran out of rice we simply scooped up the salmon mix with tortillas which was equally as delicious!! So much easier to make than you would think, just ensure you’re getting some good quality salmon!

- 250g leftover sticky rice
- 1 large fillet of salmon
- 1 tbsp kewpie mayo
- 1 tbsp toasted sesame oil
- 1 tsp hot sauce
- 1 tsp soy sauce
- 0.5 tsp rice wine vinegar
- 1 garlic clove, minced
- 1 inch piece of ginger, minced
- 1 spring onion stalk, finely chopped
- 0.5 lime
- Jalapeños and sesame seeds for serving
- 0.5 an avocado
