This week's recipes have brought me great joy, I feel like beans, pasta and noodles really encapsulate my favourite kind of meals. It’s getting so cold outside so I am stocking up on allll my favourite carbs and I hope you are too! Lemony Cavolo Beans
⏱️ 20 minutes | 🍽️ Serves 2
For a hearty winter dish, try these lemony cavolo beans. Finish with a squeeze of lemon juice and serve with grated parmesan and crusty bread.
Ingredients
- 150g Cavolo Nero
- 2 tbsp nutritional yeast
- 0.5 stock cube
- 350ml water
- 1 shallot
- 4 cloves of garlic
- 0.5 tsp ground nutmeg
- 175ml dry white wine
- 700g cannellini beans (or any white bean)
- 0.5 a lemon, juiced
- Parmesan to serve
Method
- Remove the stalks from the Cavolo Nero and blanch them in boiling water for 2 minutes. Then, plunge them in ice water until completely cool. Drain and blend in a food processor with nutritional yeast, stock cube, and water until smooth.
- In a pan, cook the diced shallot in olive oil with salt for 3 minutes. Add minced garlic and nutmeg, and cook for a few more minutes. Pour in white wine and let it bubble for a few minutes.
- Stir in the beans and stock. Bring to a boil, then simmer for 5 minutes.
- Stir in the blended Cavolo Nero mixture and let it simmer for another 5 minutes.
- Squeeze in lemon juice and stir. Serve with Parmesan on top and bread. Enjoy!

My Top Tip
You can cook your egg, broccoli and noodles in the same pot. Egg first for 6 and a half minutes, broccoli for 3 and noodles for 3-4 depending on the packaging
