We are really settling into winter and it's getting colder outside. I love to lean into the hearty, beany recipes, stuff that can be eaten out of a bowl and mopped up with bread! Hope you have enjoyed the recipes this week and I’m excited to share some new ones with you next week!

This Week's Recipes
Sunshine Saffron Prawns
⏱️ 50 minutes | 🍽️ Serves 3
Ingredients
- 1 pinch of saffron strands
- 1 shallot
- 4 cloves of garlic
- 30g butter
- 40g parmesan
- 175ml dry white wine
- 400ml veg stock
- 200g orzo
Prawns:
- 200g prawns
- 3 garlic cloves
- 1 chilli
- 0.5 a lemon
- 2 tbsp chopped parsley
Method
- Put the saffron in a small bowl and cover with warm water, leave to steep.
- Fry diced shallot in olive oil and salt for 3 minutes and then add minced garlic. Cook out for another minute or so before adding in the orzo and stirring well.
- Deglaze the pan with white wine, let it soak up for a couple of minutes and then add the stock. Stir frequently until all of the orzo is cooked through and plump about 10-15 minutes. Stir in butter and Parmesan.
- Meanwhile, fry sliced garlic and chilli in a pan with lots of olive oil and when very hot add in your prawns. Cook for about a minute per side, remove from the heat and squeeze over lemon juice and parsley. Serve these on top of the orzo and enjoy!
Mushroom Carbonara
⏱️ 20 minutes | 🍽️ Serves 2
Ingredients
- 250g mushrooms
- 4 cloves garlic
- 1 whole egg
- 1 egg yolk
- 50g Parmesan
- 250g rigatoni
Method
- Boil the rigatoni pasta for 9-10 minutes.
- Fry diced mushrooms in olive oil for 5 minutes, then add minced garlic and cook for an additional minute. Remove from heat.
- In a bowl, whisk together the egg, egg yolk, Parmesan, and a couple of tablespoons of hot pasta cooking water.
- Drain the pasta (saving some water) and add it to the mushroom pan.
- Slowly stir in the egg mixture to create a silky sauce.
- Serve with additional Parmesan and black pepper.

Shawarma Mushrooms on Sesame Beans
⏱️ 50 minutes | 🍽️ Serves 3
Shawarma paste is a real hero ingredient that you should always have lurking in the cupboard! It pairs perfectly with these oyster mushrooms and topped on some creamy, savoury sesame chickpeas. This was so delicious, I can't wait to hear what you think!
My Top Tip
This is best served hot and with some nice fluffy pita, naan or sourdough! My favourite shawarma paste is the Waitrose own brand!
